Yes, WPSE works perfectly with WooCommerce Bookings.

There are 2 things to consider:

Booking products can be edited using the products spreadsheet
But booking sessions are saved in a custom post type, so you need WP Sheet Editor for Posts, Pages and Custom Post Types to edit them
